Cognac, a variety of brandy named after the commune of Cognac, must be distilled twice and aged at least two years in French oak barrels from Limousin or Troncais. Considered by many to be the best of all brandies, it traces its origins to the 17th century when wines were distilled to withstand shipment to distant European ports. Today, brandy from Cognac is recognised as superior and as such its production is strictly regulated.
